The distillery also stores its product in bonded warehouses on site for the years of the maturation process as it slowly becomes Scotch whisky.
Much of the production process takes place in a large hall home to the stills and the mash tun, and visitors view this from the vantage point of a high gallery. The four stills are in two pairs of two, with each wash still next to its accompanying spirit still. The sharp eyed might notice the unique feature of the spirit stills at Fettercairn before it is pointed out by your tour guide.
The neck of each is cooled by water sprayed onto it by a spray bar that encircles the neck. The cooling water then runs down the outside of the neck of the spirit still before what's not been steamed off en route is collected by a collar at the foot of the neck. The effect of cooling the neck is to cause more of the heavier spirits that would otherwise pass straight into the condenser to recondense inside the still itself and fall back into the pot.
This gives the finished product a lighter and more floral finish than would otherwise be the case. Fettercairn Distillery. The Still Room at Fettercairn Distillery.

We've also learnt that Fettercairn village is also famous for being flooded by the mountain waters which you will never read on whisky books There was three tasting most of the output goes to the blends so there are not many releases First one given before walking the distillery was the FIOR, which is a limited release which may still be able to purchase in Japan and my favorite.
The last two were the Distillery Exclusives which are so so lovely. Vatting young peaty ones and old matured one together to create the best balance in cask strength is so wonderful. You'll get the nattiness and earthiness with riped orange and non-marinical peat smokiness spledding into your plate in elegant manner.
I only bought one but I should have bought more My personal opinion, whisky is not just the grace of time waiting for maturation but the art of vatting so therefore I think Fettercairn single malt with no age statement should be one of the goals all whisky must aim for. Well this article may sound more like an whisky tasting notes, but the location of the distillery is beautiful and the distillery itself is painted white with the pure unicorn drawn of the wall which characterise this whisky and is so elegant.
I think the most elegant distillery in the world! For whisky mania, this place is a must visit and exclusive whisky is a must buy! Forget all about the J. M's bible Slainte mhor! Michele B wrote a review Apr Glasgow, United Kingdom contributions 90 helpful votes. Unicorns ARE Real!
